On the first of October 2025, the sake of Fukuoka was designated a geographical indication for alcoholic beverages. The date was not arbitrary. The first of October is Sake Day, and Aomori, Kyoto, and Tottori were designated alongside Fukuoka on the same day.

A geographical indication protects the name of a place. Once one exists, only what is made in a defined area, from defined ingredients, by defined methods, may carry that name. Everything else has to be called something else, and the rules cover where it is made, what it is made from, and how.

What the prefecture points to in its own account is water. Clean water coming down off the mountains across the whole of Fukuoka, and the climate that goes with it.

The claim built on that is specific rather than atmospheric: this water and this climate raise koji with the strength to break rice down thoroughly, and the brewing method carried here is a slow fermentation held at low temperature. Whether a drinker can taste a boundary is another question. What is certain is that when a place is defined closely enough to be claimed, it is also defined closely enough to be refused, and that is what the designation actually does.
