On the thirtieth of November, 2023, sake from Shizuoka received a geographical indication from the national tax agency. The system itself dates to 1995, and its stated purpose is to allow a place name to be used properly as something the region holds in common rather than as a phrase anyone can print on a label.

To be designated, a region has to demonstrate that a characteristic particular to it has actually been established over time. Not that the drink is good. Only that it is identifiably from that place and identifiably itself, which is a different and harder claim.

The prefectural brewers' association publishes lists of approved sake in rounds, the first in March 2024, the eighth in April 2026, and approved bottles carry a mark. The list grows as breweries apply and pass the assessment, one round at a time.

What I keep noticing about all these designations is the ordering. Nothing here is decided by drinking. The conditions are fixed first, in a document, and only afterward does anyone pour a glass. A geographical indication is a claim about origin, and it has to hold up on its own before the question of taste is allowed into the room at all.
