Murayama, Yamagata
The Mogami River runs north through the middle of the valley, flanked on both sides by mountain ranges — the Ōu to the east, the Dewa hills to the west. In winter, temperatures can drop well below freezing, and the snowfall here qualifies Murayama as a designated heavy-snow zone. The river was once a working artery, and the stretch known as the Sannansho — three notorious rapids named Koten, Sankase, and Hayabusa — tested every boatman who tried to pass.
Along the western bank of the Mogami, a cluster of restaurants forms what locals call the Sannansho Soba Kaidō. The soba here is served in the style called itasoba — broad wooden trays piled with buckwheat noodles cut thick and eaten communally. The buckwheat itself is grown in the area, so the distance between field and tray is short. Alongside soba, the other staple is hippari udon: wheat noodles pulled directly from the pot and eaten with a dipping mixture, a dish that carries the practical logic of a cold-climate kitchen.葉山 rises on the horizon beyond the valley floor, and the landscape around it holds the particular stillness of a place whose rhythms were shaped more by river and snow than by road or rail.
