Cold water moves fast here. The springs that feed the wasabi fields of Azumino push up through gravel beds at a steady temperature year-round, and the sound of that current is never far away — threading between rows of green, pooling briefly before moving on. The alluvial fans built by the Azusa and Karasu rivers have made this corner of the Matsumoto Basin unusually generous with clean water, which is why wasabi cultivation took hold and why precision manufacturing followed: both disciplines require the same discipline of exactness.

At the Hotaka wasabi fields, the largest of which is Daio Wasabi Farm, the geometry of the growing beds is almost architectural — long parallel channels, stone-edged, the plants low and dense. Wasabi-zuke, the preserved paste sold in small jars, carries a sharp, clean heat that lingers differently from the freshly grated root. Horse meat and iwana, the river char, appear on local menus without ceremony. In September, the Hotaka Shrine's Omifune Festival moves through town with a formality that feels continuous with the old hydraulic order of the place — the canals, the weirs, the careful management of water that goes back to the Edo-period construction of the Jukkagase irrigation channel.

The mountains are always visible from the flatlands. Tsubakuro and Jonen rise directly above the valley, and the Enzanso mountain hut near the Tsubakuro summit has been receiving climbers since 1921. Nakabusa Onsen, reached by a long road into the Chubu Sangaku National Park, sits beside silica formations — colloidal silica and sinter deposits — that are themselves listed as cultural properties. The hot spring there is not famous; it is simply at the end of the road, doing what it has always done.
